This year, SAGE dining services is making its debut as St. Mary’s new lunch program. SAGE is a food service among private schools that has been in operation for over 30 years. SAGE is the leading dining provider for independent schools and private colleges, currently serving two other private schools in the Memphis area: Hutchison and Christian Brothers High School.

SAGE prides itself on its promise to deliver “fresh, delicious meals made from scratch in small batches using seasonal, locally sourced ingredients.”
From these locally sourced ingredients, SAGE provides foods that are catered to all including salads, sandwiches, soups, as well as foods from Mediterranean, Latin American, and Asian cuisines, hoping to expose students to a multitude of different options.

However, SAGE has previously encountered criticism in regards to its accessibility for students with dietary restrictions or food allergies.
Luca Donayre, a student served by SAGE at Miami Country Day School in Miami, Florida, found the service’s lack of accessibility upsetting.

“Sometimes it actually is a bit of a problem to find suitable options to fit my diet,” he said.

Donayre, who has been vegetarian for almost all of his life, has trouble finding a wide enough variety of vegetarian options. In response to his comments, the SAGE site manager for Miami Country Day School, Manny Lacayo, offered reassurance.

“We always try to provide a vegetarian or a vegan option every single day,” said Lacayo.

In regards to COVID safety, Director of Operations Sarah Jenks says, “One of Sage’s biggest strengths is attention to safety, which has become increasingly important in the wake of the COVID-19 pandemic.”

SAGE’s current safety protocols include placing hand sanitizer stations at entrances, stations and tables, maintaining proper distance while eating, and constant cleaning of the dining hall and kitchen.

The St Mary’s School SAGE brochure provided an expanse of information, including an overview of the service’s accessibility and dedication to their craft.

“It values whole-person health and honors a culturally diverse community… The expanded offerings allow us to accommodate your community’s allergy and dietary restrictions.”
